• two medium-small heads of green cabbage
  
• maitake mushrooms

Maybe some carrot pickles, and some pepper relish? Perhaps with the green tomatoes as well? Hm. ::ponders::

We recently made some escabeche (picked vegetables), during which I discovered that salvbard deeply loves the carrots best. It was funny to me, because we are the ones who make it generally, we could totally just do pickled carrots (or mostly picked carrots).

Do you have favorite spices to include when you do carrots?

I find carrots are the universal pickle, in that they work well with pretty much everything I've tried, which includes dill, mustard seed, garlic, hot pepper, ginger, lemon, cinnamon, and/or star anise, depending on what's around when I finally get myself a-pickling. What flavors does Salvbard tend to like best?
