Oct. 28th, 2014 06:53 pmI read this article, and it inspired some other variations (none tested yet), which might become lunches in a few weeks once it gets colder.
Inauthentic Italian: pesto, black pepper, minced sun-dried tomatoes, minced salt-cured olives, canned chickpeas, noodles, mozzarella, possibly diced lemon
Inauthentic Thai: peanut butter, soy sauce, hot sauce or Szechuan spicy sauce, julienned carrot, minced lime, rice noodles, add in crunchy sprouts, scallions/chives
Inauthentic Japanese: miso, finely minced garlic and ginger, frozen corn, julienned carrot, lightly cookable greens (spinach, shreds of Brussels sprouts, mushroom (ideally something more interesting than white button ones), tofu (and/or bits of Primal strips teriyaki jerky), noodles, add in scallions, possible extra small chunks of cooked winter squash
Inauthentic West African: crunchy peanut butter, finely minced garlic, julienned carrot, cooked sweet potato/winter squash, spinach, noodles, extra peanuts, add in lime juice
Inauthentic Moroccan: tomato paste, black pepper, cinnamon, minced preserved lemon (or minced lemon + salt), spinach, chickpeas, raisins, couscous (not the Israeli kind)
I wonder if I could do something like tuna noodle casserole with cream of mushroom soup, powdered milk, potato flakes, frozen mixed veg, tuna, and noodles, possibly with some meunster, and whatever spices appeal at the time (likely some salt, at least).
I also wonder if I could fake a chili with salsa, cumin, different kinds of canned beans, peppers. There's also those frozen mini-pierogies that might be useful in something, perhaps chowder-ish with milk powder, corn, and some form of onion (pre-fried or dehydrated), and some form of fish (lox? smoked haddock?).
