[local eating] Fish share, week 2.6
Oct. 20th, 2009 10:15 amYesterday's fish share was a pollock (this is the spelling I grew up with, but apparently, it's a variant of 'pollack', which looks rather too much like an epithet for certain people of Eastern European descent for me). It was large, making it a bit unwieldy for my current set up.
However, I managed to fillet it, with the first side coming out much prettier than the second, as usual (because of the orientation of the fish and my cutting hand). I skinned the fillets, cut them into large servings (more than two packs of cards), getting five out of each fillet. The carcass went in to be steamed, the pieces picked off the skeleton (and likely put into salad or something; I have a couple of full cereal bowls worth) afterward. I brushed the fillets with hummus, then some chipotle mustard, topping that with unseasoned panko. (I was too lazy to add seasoning myself.) I baked these in a hot (425 F) oven for 12 minutes, and they came out fairly well.
Two weeks left before there's a fish hiatus.

(I think the derogatory term I learned as a kid was spelled differently, but I can't remember how -- maybe the 'c' was missing? Anyway, I tend toward the 'o' rather than 'a' spelling with fish anyway, too.)
