Red chicken
Jan. 28th, 2009 08:43 pmLast night at gaming, the food order was for Chinese, which got me wanting fleishigs as I sat there eating rice with veggies and walnuts. So tonight I stopped at Trader Joe's and got some chicken legs. I knew I had beets at home, and cranberries that needed using up, and some organic limes, and that all came together in my head. I got a bag of organic sweet potatoes, and came home to cook. (Well, do dishes first, then cook.)
I got out the fleishig casserole, and started putting vegetables in: half a head of garlic, the cloves smashed; an onion, diced large; four medium-small beets, peeled and diced medium; three sweet potatoes, diced medium; two limes, roughly chopped; a bag of fresh cranberries, picked over (a lot; they really needed to be used), plus a liberal grinding of black pepper and a large spoonful of local honey drizzled over. I put the chicken legs on top, splorting some chipotle mustard and a bit more honey on top, then put it in the oven, uncovered, at about 325. After half an hour, I covered it, and let it go another hour.
I just had some, and it's red. Also sweet, and sour, and spicy, though a bit too liquidy.

Date: 2009-01-29 02:06 am (UTC)Considering how much liquid I got from this (I did put a little water in the bottom of the casserole just to make sure things didn't stick), you might want to have rice or something like that to go with it.
