mango chutney

i finally turned half the case of mangoes into mango-ginger chutney. it's... rather spicy (sorry, cthulhia!).
brought a pint to potluck (sent it home with cthulhia; i assume that means she's forgiven me for that first bite :-), and have 4 half-pints (which sealed themselves from the heat, and will last ages) and part of another pint (for more immediate consumption).
unluckily, the cooking i am doing for shabbat cannot include very spicy food, or i'd bake it on chicken (yum). maybe next week. or maybe i'll have non vegetarian people over not on shabbat (gasp) for non leftovers (double gasp) before i leave.
still have to figure out what i want to do with the other 6 mangoes... (maybe another permutation of mango chutney? other than ginger, any suggestions for complementary major flavors? (there's always hot spice, vinegar, and sugar))

Date: 2001-12-23 02:12 pm (UTC)i think i have a rather different style of cooking than my brother - he's much more gourmet than i am. i'm a plain cook, not prone to measuring things, tending towards quick & easy food...
canning i started a couple of years ago, partly b/c it intrigued me, partly b/c i wanted jam-things i couldn't get in the store, partly b/c i found myself with a bunch of fruit (ok, and partly b/c a lot more people were baking bread, so i needed to do something new...). also, chutney is something that is hard to get here, especially anything other than mango (and i suspect my mango permutations are not much like the jars available at the supermarket), and i decided that the sweet-spicy-sour combination was one i like (over chicken, on bread, straight from the jar....). and i find it relatively easy, and lots of payback (i always have something i can bring as a hostess gift if i remember in time....)
