  • three pounds of potatoes (mostly red-skinned ones
  • two pounds of beets
  • two pounds of purple-top turnips
  • two large acorn squash
  • six green peppers
  • six little cauliflowers
  • four tiny eggplant
  • two stalks of Brussels sprouts (I traded for more beets; the work involved in getting them ready to cook is more than I wanted to deal with this week)
  • three quarters of a pound of spinach
  • six heads of garlic
  • take what you want hot peppers (I took a lot of jalapenos)

First thoughts: what, no carrots?! Cook the peppers with eggplant, onions, mushrooms, tomato sauce, and Impossible meat, then serve with pasta. Various roasted root veggies. Roasted cauliflower. Baked acorn squash. Lacto-fermented jalapenos. I'm not super-excited by purple-topped turnips though; any favorite recipes appreciated.

I'm delivering Shabbat dinner to two couples with new babies (both have listed similar restrictions in what they want, otherwise I wouldn't have stacked them), so I'm aiming for things that are portable as well as stay warm in the sukkah.
