Sukkot meals
Oct. 6th, 2006 09:52 pmIt's just me for first (Shabbat) dinner and second (Sunday) lunch, so it'll be whatever appeals. I haven't managed my time nearly as well as I'd've liked, so meals are a bit simpler than I'd hoped.
Shabbat lunch
Second night dinner
I didn't make cranberry relish; a last-minute 3:30 meeting put the kibosh on that. And I didn't do the winter squash on puff pastry thing, either (leaving me lots and lots of winter squash (though I have made my way through the eggplant abundance, at least)). I may still make steamed edamame for dinner.
Also, a reminder to myself that I have to get the disposal fixed or replaced after yom tov.

Yay for the eruv being up. Boo for needing the 18 minutes.
* This morning's lesson in cooking while tired: I got partway through and ran out of white flour, then realized I also didn't have enough cocoa. I made substitutions (brown sugar, chopping up a 70% cocoa bar (thanks, Electrictruffle!), but they're likely not the best cakes I've ever made. *sigh*

- wine, challah, honey
- hummus, za'atar, olives
- a big green salad with red leaf lettuce, mesclun, arugula, tatsoi (or pac choi, or whatever it is), mizuna, chicken cooked in eggplant garlic spread, possibly mango, almonds or pine nuts, balsamic vinaigrette
- brown rice mixture
- sauteed eggplant, red pepper, jalapeno, onion, zucchini, and mushroom
- chocolate cake*
- homemade applesauce
- tea, other hot drinks
Second night dinner
- wine, challah, honey
- hummus, za'atar, olives
- vegetable soup with onion, garlic, sweet potato, many hues of carrots, turnip greens, collards, red kale, and some hot sauce. Meat and/or grain/beans may be added.
- turkey meatloaf (with roasted eggplant, onion, red pepper, fennel, and a little tomato)
- brown rice mixture (if I don't make spicy noodles)
- roasted cauliflower and zucchini
- chocolate cake*
- homemade applesauce
- tea, other hot drinks
