The zoo in Houston has just arranged to raise prairie chickens on NASA grounds. Attwater's prairie chicken (technically a grouse) is hard to breed in captivity, and they're hoping that the quieter, more open space will encourage prairie chicken fertility. What I really liked in the article was a quote from someone in NASA pointing out that part of their mission is "protecting the home planet," and this qualifies.

Pesach cooking, so far:
  • two gefilte fish loaves with zucchini, garlic, and mushrooms and topped with salsa
  • an overfull pan of oven ratatouille
  • a tray of roasted potatoes and onions
  • a melange of mushrooms: portobello, button, and enoki
  • sauteed red peppers with onions, scallions, garlic, a few small tomatoes, and black olives
  • still to come: chicken thighs with sweet potatoes and cayenne (my first adventure with organic, free-range poultry)

And I've got lots of salad fixings, too. I had thought about making collards, but I'm not in the mood, and I can cook on the holiday if it appeals more then.

The futon frame left as planned last night. It's odd seeing the space empty, and pleasing. I've decided not to move my bed before the holiday; I don't need to add any more things to do to the mix.

I should've salted the eggplant first. And I shouldn't've added extra veggies, because it meant the ones too far down got mushier than I wanted. Otherwise, though, decent. How about you?

It was all right. My husband liked it. I didn't care much either way. But that goes back to me not being overly fond of ratatouille. I have to give it points for being quick, easy, and a beautiful presentation.

I should have used a shallower pan, though.
