The pre-Thanksgiving edition.
And no bok choy, which is good, since I've been having a hard time getting through all of that.
First thoughts: mixed roasted root vegetables with onion beet parsnip and carrot for Thanksgiving; spicy butternut squash puree; green salad; turkey soup with a bunch of veggies. Still to get: more onions, potatoes, celeriac/celery for soup.
- a butternut squash
- a bunch of collards or kale (I chose collards because there wasn't lacinato)
- a small head of lettuce (I chose what might be red oak, with deep purple dentilated leaves)
- one and three quarters pounds of carrots
- three pounds of sweet potatoes (long narrow ones)
- one and a half pounds of parsnips
- two or three (I've forgotten) pounds of beets
- two leeks (I chose fat ones)
- a head of garlic
- two pounds of mixed veggies (mixing and matching onions, potatoes, turnips, celeriac, tomatoes (mostly green): I chose all onion, since I was pretty much out of onions)
- two turnips or rutabagas (I think I chose rutabagas; the light was a bit dim in that corner)
