Farm share, week 2

This week's bounty:

• four large purple kohlrabi (bulbs, not greens)
  
• two small fennel
  
• two pounds of red beets (no greens)
  
• a pound of garlic scapes
  
• two large bunches of hearty greens (I chose green curly kale for both, no Swiss chard)
  
• two enormous heads of Boston-style red-leafed lettuce
  
• a pound of mixed baby salad greens

First thoughts; all the salad, all the time, using lettuce and also kohlrabi (and herbs and edible flowers from my porch); roasted beets; pickled scapes; sauted kale and scapes with protein/sauce (Indian pouch, or Impossible, or eggs and potatoes, etc.); fennel with lemon and fish, maybe some olives.
