Farm share, week 7

• one Italian purple eggplant, or two Asian eggplants (I went with Italian)
  
• four tomatoes (!happy tomato dance!)
  
• 20 ounces of carrots, some orange, some other colors
  
• a head of lettuce (I chose red leaf)
  
• three pounds of zucchini
  
• a bunch of lacinato kale
  
• a bunch of mint
  
• a small bunch of medium red onions
  
• two regular cucumbers (the kind with large seeds I don't care for; traded in for another bunch of red onions)
  
• a third of a pound of king oyster mushrooms

First thoughts: almost the right mix to make a ratatouille, except there's no way I'll be cooking these tomatoes. perhaps a kale and carrot/sweet potato salad, maybe with sunflower seeds or hazelnuts? cucumber mint salad, possibly with feta and watermelon?
