Yesterday I went apple picking at Shelburne Farm, in Stow, picking half a bushel of mostly MacIntoshes, with some Fuji, some Mutsu, some Empire, and some Cortlandt. I discovered that the bags aren't quite designed to be filled; I had to carry the bag back to the car in my arms.

So far: last night I made a square apple crisp. Today I again attempted apple pickles, realizing only after canning that the original recipe calls not for actual canning, just refrigeration (up to 3 months), which is why last year's batch, and this one, ended up being more like six pints of spicy, vinegary applesauce. I used some apples with the boozy beets and boozy onions left from liqueur making for a batch (which turned out to be four pints) of apple-beet chutney. I started a quart of straight apple liqueur, and added some apple to tuna salad.

I still have more than half the bag left.

Current plans: another attempt at the apple pickles, this time putting them in the fridge instead of canning them (I have some of the pickling liquid left from the first batch, but will need to make some more); another batch or two of apple liqueur, this time with honey, or cinnamon, or vanilla, or star anise, or a mixture of these (other thoughts?); more apple crisp (and/or pie, and/or cake); apples and honey on Rosh Hashana (which was the original impetus for apple picking when I did); perhaps oven-drying some. Oh, and applesauce with whatever is left after chag.
