• three pounds of Yukon Gold potatoes

• a package of Mi Terra corn tortillas (swapped for more carrots)
  
• a jar of roasted chili salsa by Kitchen Garden (swapped for more potatoes)

First thoughts: carrot-radish slaw, likely with a dressing involving sesame oil, soy sauce, lime juice, ginger, rice vinegar, etc. (and maybe a different batch with a mustard-y dressing). Roasted potatoes. Sauteed spinach, possibly with mashed potatoes.

I'm happy enough with what came, but wouldn't mind a bit more variety (rutabaga, parsnip, sweet potato, celeriac and so on all come to mind).
