- four pounds of sweet potatoes
- two pounds of small beets (plus some extra due to being towards the end of the distribution)
- two pounds of carrots
- eight small yellow onions
- eight heads of garlic
- two bunches of kale
- one and a half pounds of spinach (half swapped for more sweet potatoes)
First thoughts: saute the spinach with some onion and garlic, "poach" some eggs in it, then serve on top of toast (ie, this is what I just made for dinner); roasted sweet potatoes and chickpeas with cumin or curry powder; kale and sweet potato with sausage. Not sure what else, but these are all easy veggies.
Next week starts the winter share (which is every other week); the farm has some shares available, so if anyone local is interested, let me know and I can get you more info.
