Kosher cheese!

I was meandering through the Whole Foods closest to me (the smallish one in Somerville), and found that in the fancy cheese section, they have Point Reyes blue cheese, which has a hechsher! (Their Toma cheese also has certification; I didn't see it at Whole Foods, though.) I haven't done much with blue cheese, other than with salad, but want to consider more possibilities. Anyone have favorite uses?
