I ended up with a sort of deconstructed eggplant not-parmesan.
The garlic I grew on my porch. The rest of the veggies were from the farm share.
- Heat pan on a medium-high flame with olive oil in it.
- Dice a red onion.
- Add to pan.
- Cut up two Asian eggplants.
- Do crunches and bridges while the onion cooks.
- Add eggplant to pan.
- Dice a large tomato.
- Do lunges while vegetables cook.
- Add tomato to pan.
- Mince a clove of garlic.
- Add to pan.
- Do reverse crunches while vegetables cook.
- Slice in some harvarti with dill.
- Turn off the heat.
- Rip up some fresh basil.
- Add to pan.
- Mix.
- Eat.
