They got rid of them to put the blue ones in, because apparently you can't have a larger number of colors... And market research had shown that the tans were least beloved by the M&M-eating public, or something, while everyone loves blue food (not). I remember there being some campaigns to save the tans when the edict came out, and people buying lots of bags before the blues were put in, etc. (Side note: apparently you can order custom mixes, with a wide variety of color options not usually available in stores, and tan is one of the options.)
I'm not sure if the purples are in addition to or instead of the other colors...
