- roasted garlic, also olives
- green soup (fresh pea soup with mint)
- green salad with red leaf, green leaf, and Boston lettuce, also mesclun, scallions, cucumber, hearts of palm, roasted red and yellow summer squashes with onions, and cubed chicken cooked in eggplant-garlic sauce
- cooked greens (chard with onion, preserved lemon, and pine nuts)
- sorbet (mango-tangerine, lemon) and fruit (dates, strawberry-cranberry compote), with the option of pastry twists
