Large box, two thirds veg, one third fruit.

  • a bunch of chard
  • one and a half pounds of French fingerling potatoes (red skinned)
  • five ounces of spring mix salad greens
  • two medium zucchinis
  • a bunch of broccoli (two stalks)
  • three garnet yams, one rather large
  • an eggplant
  • six bananas
  • five Bartlett pears
  • five honey tangerines
  • two navel oranges

And you ate all that?

Well, I haven't eaten it all yet, plus I've had dinner guests to help.

Why does it remind you of your daughter? (And she doesn't like potatoes?)

My daughter LOVES vegetables and fruit but, being Type 1 diabetic, avoids potatoes! (They, being high GI carbohydrate, mean she has to take a lot of insulin to handle them and she prefers to eat lots of carrots etc instead.

Ah, yes, that makes sense.

A friend who's diabetic told me that the thinner-skinned types of potatoes have lower GI carbs, but I can imagine it's easier to avoid all potatoes, if those even fit in her diet, anyway.

I love vegetables; in the summer I get a farm share, but the rest of the year I default to weekly organic deliveries.
