Cranberries, apples, and oranges, oh my!
Dec. 15th, 2004 07:55 pmI made (well, am making) a batch of improv cranberry chutney tonight. I had apples and oranges left from last week's produce delivery, and I didn't want to waste any yummy citrus peel, so...
Two bags of frozen cranberries with a healthy glug of cider vinegar were soon joined by four small apples, peeled and diced, and two whole oranges, minced. I tossed in the last bits of a head of garlic (it was there), then started adding spices: cayenne, cinnamon, ginger, cloves, nutmeg. The fruit isn't sweet enough to balance the spice and sour alone, so in went some brown sugar, and some hot sauce. Plus a bit more cayenne. Oh, and there was a bag of mixed color raisins, and that seemed to fit, so in some of them went. Now it's simmering, and I'm trying to decide if I want to add some crushed walnuts just before I turn the heat off.
