The head of my department brought in what might be described as a metric buttload of rhubarb from his garden. Apparently he and his wife have exhausted the possibilities for strawberry-rhubarb crisp, just rhubarb crisp, etc, and have even frozen a bunch, and now the bounty is available...
So I've been thinking of some sort of rhubarb jam (I have less freezer space than he does; canning means I don't have to use precious freezer space for ingredients I'm likely to forget are in there, and so never use.). I know the classic is strawberry rhubarb, but for some reason the idea of cranberry rhubarb is appealing (yes, I know it would take lots of sugar), possibly with a bit of (surprise!) crystallized ginger. Luckily, I still have cranberries in my freezer...
Does anyone have other suggestions for favorite rhubarb confections, or opinions on the cranberry-rhubarb idea (I know, I'm probably nuts to put two really tart things together.)? (I've made strawberry and rhubarb with dumplings already, as well.)
