Farm share, late season 2 of 4
Nov. 11th, 2021 07:15 pm- three large heads of radicchio
- nine yellow onions (eight small, one tiny)
- eleven carrots (many of unusual size; seems around 5 lb or so)
- two smallish butternut squash
- a small bag of arugula
- a quart of mixed radishes (mostly round red, some long red "breakfast" ones, a couple of watermelon radishes, and what look like some small purple starburst daikon)
- three large rutabagas
- two medium sweet potatoes
- seven Cortland apples (Apex Orchard)
First thoughts: mashed rutabagas; arugula wilted in a dish with barley or rice; fridge pickled radishes; pickled carrots; maybe baking slices of butternut squash with onions and herbs. No clue what to do with that much radicchio; any suggestions?
