Cookies of unusual sorts
Dec. 12th, 2012 09:01 pmI'm invited to a cookie party that will have a table for 'regular' cookies and one for odd ones (last year had 'sushi' ones with rice and nori, for example). I've been thinking about making something out of the ordinary; I figure lots of people will make chocolate chip, oatmeal raisin, and sugar cookies. And for some reason the first thing that popped into mind was hummus cookies. Some time after that, chickpea puree got me thinking of black bean puree instead, and making black bean cookies studded with corn kernels. I haven't experimented yet, and am unsure: replace half the butter with beans? Something else? Will these have a chance of being ok, or just too weird? People who are more experienced in cookies, do you have thoughts about this, or other bizarre cookie ideas?
