Kosher rennet for mozzarella
Feb. 24th, 2009 05:41 pmI have friends who found an affordable price for kosher-certified (OU) microbial rennet... as long as it's bought in liter bottles. Since a one-pound batch of mozzarella takes something like a quarter of a teaspoon of rennet (a liter bottle making about 800 pounds of cheese), this is way more than they can use, given its year to year and a half shelf life. So, they're looking for people to split an order with.
The plan is that they'll order a bottle after Pesach (it's not kosher for Passover certified) and have it repackaged in family-sized packages (not sure exactly how much this is; presumably specific details will be available soon) under supervision. The current estimate is that this would cost about $6 (plus shipping), which breaks down to about $1 to $1.50 plus the cost of a gallon of milk for a pound of cheese (plus the satisfaction of making cheese yourself, etc., etc., etc.). And they'd include their mozzarella recipe, too. Let me know if you're interested.
