Midweek dinner
Dec. 10th, 2008 10:54 pmA friend came over tonight, and I was so caught up in moving things around the apartment that I had nothing planned, much less made, for dinner. I'm also out of a lot of things, which made it a bit more challenging. What I ended up with:
* When Pigs Fly six grain and pumpkin seed bread, and hummus
* salad: mesclun, cabbage, jicama, and tofu croutons (made with brown mustard seeds and Chinese five-spice powder; hat tip to Breedingimperfection for the idea)
* roasted veggies: onions, garlic, carrot, white and purple potatoes, and a turnip
All the veggies were from the farm except the jicama and the onion. The bread and tofu were local, and the tofu organic. A "virtuous" meal, I suppose. Really, though, it was all I could figure out to make when I needed something.
