Large box, all veggies.

  • a bunch of spinach
  • a bunch of bright lights chard
  • a pint of grape tomatoes
  • a head of cauliflower
  • two medium eggplants
  • two bunches (= five stalks) of broccoli
  • two medium yellow onions
  • two yams (one humungoid)
  • four small-to-medium zucchinis
  • three medium leeks (yay!)

Hm. I wonder if a potato-leek soup would work with sweet potatoes. (Other favorite things to cook with leeks?) Oh, and I still have one bunch of spinach from last week; must use that up.

Oh, and happy International Women's Day.

leeks go very well with eggs, in a frittata for example. Butternut squash and leak soup is my favorite.

leeks and cauliflower would make a good soup.

leek and zucchini latkes? actually, I think I made zucchini pancakey things a while back that were really good. (ah, here! (http://www.epicurious.com/recipes/recipe_views/views/1208) --note: much better warm!)

My brain keeps wanting to toss the eggplant in with that and it's just not working... think Greek and see if you can get the leeks, eggplant and zucchini to mesh...

Interestingly, the yams and chard are going together for me, but then again, I'm thinking Southern today.

Anyway, you'd asked about leeks... there was a root vegetable soup in the paper about 6-8 years ago with leek, turnip, sweet potato and a bunch of other stuff -- my first experience with an "add milk" soup... I've been thinking about it a lot lately, ought to dig it up... Oh, and there is always a chicken soup with rice sort of thing.

Back to cleaning. Leeks are more fun than cleaning!

Goodness knows if it fits with your dietary restrictions (it does work well without the bacon at least), but if I buy leeks J always asks hopefully if I'm going to cook leek pudding (http://ninecats.org/margaret/recipes/english.html#LeekPudding).

I've been so enamoured of roasted cauliflower I hadn't considered any other use (now, if they'd given me a couple of heads of cauliflower, that would be a different situation :-).

Thanks for the recipe link. What's weird is that your suggestion and Yagagriswold's both made me think "perfect interesting food for Passover!" Which is warped, in that it's still over a month away, and these particular veggies won't last that long.

Somehow, I can only get the leeks, zukes, and eggplant to mesh in a ratatouille variant.

I put yams/winter squash and greens together, usually in the company of some sausage and hot sauce, though.

I had a soup with rice Tuesday, and for some reason, it does not inspire (at least, not nearly as much as the monthly rhymes for chicken soup with rice).

Hope your cleaning got done!

That looks quite nice (cheese-free leek quiche!). I'd have to substitute for the suet in the crust; I assume butter/margarine would work ok, though not quite the same.
