Baked good remedy?

I made a batch of zucchini bread this morning (well, cake, if you go by the shape of the pan, but whatever). And it came out pretty well for texture and all... but there's a noticeable bitterness from the baking powder that's not so nice. Does anyone know a way to mask it? Would frosting or something help? Or should I ditch the 5 cakes?

cut back, and if you're concerned about rising-ness, try adding in an extra egg or something.

just try some creative sort of bread pudding out of the bitter batch. a lightly sweet vanilla sauce, plus cooking into egginess, just might take the edge off.
(also, you make excellent bread puddings, so i see only great things here.)

Thanks for the vote of bread pudding confidence! I'll have to get more eggs (the triple batch took 9), but that might work. Maybe with some molasses, which has a bit of an edge to it as well, but one I like better. (Oh, no, bad tongue twister land ahead.)

I second the vote of confidence on bread puddings. Of course, I haven't ever tasted one of yours personally, but I first heard of double chocolate bread pudding in your journal. It's been a big hit with my husband and with friends.
