Is it Red Leicester? I have seen that used in a mixture with cheddar or similar for cooking because it makes a nice colorful effect.

Otherwise they would probably just be eaten with bread or crackers, or in my case in a cheese-and-pickle sandwich (pickle meaning chutney :-)

My brother likes Red Leicester and salad cream sandwiches.
